grain-free granola

Eating Paleo or WHOLE30 and missing your morning cereal routine?  This super easy, grain-free granola could be just the thing to fuel your day the healthy way.

 

 

 

BUY THESE:

2 cups loosely chopped mixed nuts (Almonds, brazil nuts, cashews)

Pinch of salt

1/2 cup linseed (flax seed) 

1/2 cup pepita (pumpkin seed)

1/2 cup shredded coconut

1/4 cup cacao nibs

1/4 cup sunflower seeds

3 tablespoons melted coconut oil

 

DO THIS:

Preheat fan forced oven to 120-130 degrees

Combine all dry ingredients

Mix through melted coconut oil

Spoon evenly onto a paper-lined baking dish

Cook for 20 minutes, mixing half way through cooking time

 

UPLEVEL:

While your granola is cooling, add 5 or 6 drops of therapeutic grade essential oil.  My faves are Peppermint or Wild Orange.

 

 

SERVE:

3 spoonfuls of granola + a small tub of coconut yoghurt (or 4 spoonfuls).
Top with low sugar fruits in season.

Berries, citrus, kiwi all work beautifully.
