Rosemary + Sea Salt Seed Crackers
oh yumminess x 1,000 - these WHOLE30 ingredient and Paleo friendly seed crackers are just too amazing for words.
I say WHOLE30 ingredient, because strictly speaking, W30 is a snack-free eating protocol. We've ben eating this way for a few months now, and personally, it's not realistic to think that I'll go the rest of my life without eating another cracker-type treat. So I flexed a recipe from iquitsugar to add some essential oil flavour.

-GATHER-
1/2 cup flaxseeds
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/4 cup sesame seeds
2 tablespoons chia seeds
1 teaspoon fine sea salt
1 cup water
2 drops dōTERRA Rosemary Essential Oil (please make sure your essential oil is Certified Pure Therapeutic Grade and safe for internal use)
-and then-
Add all seeds into a large bowl
Combine water + Rosemary Essential Oil
Pour water + oil into seeds and mix well.
Let sit for 30 minutes for water to absorb.
Line a standard, shallow baking tray with greaseproof paper **
Pour mix into tray and spread evenly.
Use a knife to score a 4 x 4 gridline into the mix to form crackers.
Bake at 170 degrees for 30 minutes
Gently separate crackers and turn.
Bake for a further 15 to 20 minutes until firm.

**not sure if this was a rookie error or just bad luck, but the paper fully stuck, all embedded-like into my mix. First batch = sadness. I tried painstakingly to peel the paper off, but ended up throwing most of them in the bin.

This is my second batch - and as you can see, they're a little overdone. I've adjusted the cooking times of the original recipe to dial the colour back a bit.
So, so, so yummy served with a spicy lime guacamole.
